Chef Lao Castillo of Bukas na Hapag

Chef Lao Castillo is a food heritage and food security advocate. For most of his life, he has been doing development work in the fields of agroecokogy, migration, human rights, social entrepreneurship and maximise his passion for food and social engagement. He specializes in Philippine heritage ingredients and cooking techniques. Through his food project Bukas na Hapag, he spearheads collaborative, immersive and transformative food endeavours. Chef Lao, who is more comfortable being called a kusinero, took culinary training at the Center for Culinary Arts. His current projects include developing a farm/sea to table dining places in Aurora, Rizal and Quezon.
